Protein Muffins

Ingredients:

  • 2C Kodiak Cake Mix
  • 1C Stevia Baking Blend
  • 2 Packages Sugar Free Jello Mix
  • 1 tsp Baking Powder
  • 3-5 Scoops Quest Protein Powder
  • 1C Liquid Eggwhites
  • 1C Fat Free Vanilla Greek Yogurt
  • 4 Tbsp Butter (can sub applesauce)
  • 1C Cashew Milk (unsweetened)

Directions:

  • Preheat oven to 350
  • Mix all dry ingredients
  • Mix all wet ingredients (melt butter before and add)
  • Slowly add wet to dry
  • Stir until thick and smooth
  • Spray cupcake tins or liners with nonstick cooking spray
  • Fill evenly between 12 large muffins
  • Bake 20-25 mins

I used chocolate Kodiak pancake mix, chocolate sugar free jello and vanilla Quest protein. I added 1/2 chocolate chips as well. Macros for these (3 scoops protein, 4 tbsp butter and choc chips) are:

And these are GIANT muffins! For less fat, use applesauce instead of butter and skip the choc chips! But these are a great snack option that will satisfy sweet craving and not give you a ton of carbs/fat. My coworker actually used regular Kodiak mix, sugar free cheesecake jello and strawberry Quest protein to make Strawberry Cheesecake Muffins. Enjoy!
